About the journal

This international journal, first issued in 1921, publishes bimonthly in English and in French original scientific articles, reviews and technical notes on the microbiology, biochemistry and physicochemistry of milk and its derivatives, or on transformation procedures.

Cr¨¦¨¦e en 1921, la revue Le Lait a pour objectif de donner une diffusion internationale ¨¤ des articles pr¨¦sentant des travaux de niveau scientifique incontestable dans les domaines de la microbiologie, de la biochimie, de la physicochimie du lait et de ses d¨¦riv¨¦s, ou dans celui des proc¨¦d¨¦s de transformation. Avec une p¨¦riodicit¨¦ bimestrielle, Le Lait publie des travaux en langues française et anglaise, sous forme d'articles originaux, de revues g¨¦n¨¦rales et de notes br¨¨ves.

The journal Le Lait publishes original articles, review articles, short notes and proceedings of scientific meetings on dairy science, in French and in English. Submission of a paper implies that it reports original unpublished work, that it is not under consideration elsewhere, and that if accepted it will not be published elsewhere in any language without the written consent of the editors. The publication of the text and black and white figures is free of charge.

Authors are encouraged to submit their articles via e-mail, but only through the Editorial Office at lait@labtechno.roazhon.inra.fr.

The message should include the title of the article, address, telephone number and e-mail of the corresponding author, the first and last names of all the authors, and a complete list of files. The text should have Microsoft WORD or RTF format. Illustrations and figures should have EPS, PS or TIFF format. PDF files are also welcome. If the paper includes photos, one original set of photos should be sent separately by postal service to the Editorial Office.

Exceptionally articles may be submitted in hard copy. Three copies should be sent for USA, to V.V. Mistry, Department of Dairy Science, South Dakota State University, DM Building/Box 2104, Brookings, SD 57007, USA; for Canada, to S. Gauthier, STELA, Universit¨¦ Laval, Qu¨¦bec, Canada GIK7P4; for all other countries, to J.-L. Authors can suggest 3 or 4 names (+ addresses) of qualified reviewers for the manuscript, but the selection of the reviewers will be the responsibility of the editor.

FINAL VERSION

The files of the final version accepted for publication should be sent to: lait@labtechno.roazhon.inra.fr. The format of the files for the text and tables should be WORD or RTF. Figures should be placed in separate files, and should be in EPS, PS or TIFF format using standard fonts and high resolution.

GENERAL PRESENTATION

Manuscripts should be typewritten, double-spaced with margins of at least 3.5 cm at top, bottom and sides for editor¡¯ s markings. Pages and lines should be numbered throughout.

The manuscript should be presented as follows: title page, abstract and keywords in the language of the article, title, abstract and keywords in the other language (in French if the article is written in English and vice versa), introduction, materials and methods, results, discussion, acknowledgments, references, figure legends, tables, figures.

Section headings should be numbered following the international numbering system (1.; 1.1.; 1.1.1., etc.).

Tables and figures, with their captions, should not appear in the text, but be placed together on separate sheets at the end of the manuscript.

Punctuation characteristics of each language should be used (semi-colons, colons, question marks and exclamation marks are never preceded by a space in English). Do not hyphenate words at the end of a line unless a hyphen is to appear in the printed text.

Abbrevations should be punctuated. There is no space between opening and closing brackets and the following and preceding words, whichever the language. Small capitals should not be used.

Title page

The title page should include the following: the title of the article, which should be concise but explicit, the surname and forename (in full) of each author, the department and institution where the study was carried out, telephone and fax number and e-mail adress of the corresponding author (identified by an asterisk), a short title (running head) of no more than 45 characters, including spaces.

Abstract

Each abstract (less than 300 words) should be in a form suitable for abstracting services. Paragraphs, footnotes, references, cross-references to figures and tables and undefined abbreviations should be avoided.

Keywords

Up to five keyworks should be supplied, to assist the reader and facilitate information retrieval. Keywords may be from the title, abstract or text. The plural form and uppercase letters should be avoided. Keywords should be written in bold lowercase letters, separated by slashes.

References

In the reference list, the references should appear in alphabetical order, preceded by an Arabic numeral enclosed in square brackets. The authors¡¯ names are listed in alphabetical order, and in chronological order for each author. If there is more than one author, the order is as follows: publications of a single author in chronological order; publications of the same author with one co-author in alphabetical order of the second author, and in chronological order; publications of the author with more than one co-author in chronological order.

The references are cited in the text by the corresponding number enclosed in square brackets.

All entries in the reference list must correspond to references in the text and vice versa.

The titles of journals should be abbreviated according to the rules of Biosciences Information Service (Biosis) or those of the "Liste d¡¯abr¨¦viations de mots des titres de publications en s¨¦rie" (conforming to ISO 4, Centre international de l'ISSN, Paris). Words for which no abbreviation is given should be written in full.

Examples of the layout and punctuation to be used in the references are given below:

Illustrations (figures and tables)

Illustrations should be numbered using Arabic numerals for figures and Roman numerals for tables, and should be referred to in the text by their number: Figure 1, Table I. The numbering of the tables must no be combined with that of the figures. Lettering (symbols, numbers, etc.) should not differ from figure to figure and should be of sufficient size to remain legible after reduction (letter 1¨C2 mm high after reduction to either one or two column format). Half-tones should contain good contrast and be originals (i.e. not already reproduced); line drawings should have a white background. Photographs should be presented in the form of plates to be reproduced without reduction (maximum size 12 x 19 cm). The lettering should not be placed any closer to the edges than 1 cm. The figure captions should be explicit so that the illustrations are comprehensible without reference to the text, and should be presented together on a separate sheet at the end of the paper, with an English translation for the articles in French. In the paper version of the journal, figures are in black and white (for colour, authors should make a contribution, prices on request), but they appear in colour in the electronic version.

Tables should not exceed 84 characters per line (140 if in landscape format). The title of each table should be written above the corresponding table. Figures and tables published elsewhere cannot be accepted without the prior consent of the publisher and the author(s).

The Editorial Board retains the right of returning, before evaluation, manuscripts to authors who do not comply with these recommendations. The author is advised to keep one manuscript and a set of figures.

Units

SI units should be used. Note that cm, 100 g and 100 mL are accepted, although they do not form the basis of SI units. Normality and molarity should not be used. The unit "litre" should be abbreviated as "L" (also mL, µL, etc.). The negative index system should be used for all combinations of unit abbreviations. Give compositions based on mass or volume as (e.g.) mg¡¤L-1 or mg¡¤kg-1 and not percentage. The units Da and kDa should be replaced by g¡¤mol-1 and kg¡¤mol-1.

Electronic-only material

Electronic-only material is designed to provide supplementary information that is either too voluminous for printing or that is designed specifically for the Web, such as illustration in colour. Electronic-only material may include but is not restricted to: (Large) tables; Appendices; Programmes; Images; Videos; ...

PROOFS AND REPRINTS

Proofs will be sent to the author indicated on the title page. They should be carefully corrected and returned to the publisher within 48 h of reception. If this period is exceeded, the galleys will be proofed only by the editorial staff of the publishing house and printed without the author¡¯s corrections. Should substantial changes in the original manuscript be requested (other than typographical errors), they will be made at the author¡¯s expense. The PDF file of the article will be provided free of charge. An order form for reprints - and, if required, for the publication of colour figures - will accompany the proofs.

As soon as the article is published, the author is considered to have transferred his rights to the publisher. Requests for reproduction should be sent to the latter.
