About the journal

JOURNAL OF TEXTURE STUDIES, Editor-in-Chief: M.C. Bourne; Editor: T. van Vliet; Associate Editor: V.N.M Rao, Vol. 34, $245.00 (6 Issues), Cat. No. 3005, ISSN 0022-4901. The Journal of Texture Studies is now published in six issues per year to facilitate publication of the increasing number of papers, which reflects the increasing research and development activity in texture studies. The Journal covers textural subjects for those interested in texture as part of commodity work and for rheologists attempting to relate fundamental measurements to textural attributes. Occasionally special issues highlighting important topics are published. Previously published special issues include texture profiling, textured proteins, and fruit texture. The Journal contains research papers, research notes, review papers, discussion papers and book reviews. The Journal is recognized worldwide as the authorative publication in food texture.

JOURNAL OF TEXTURE STUDIES

INFORMATION FOR AUTHORS

The Journal of Texture Studies currently publishes peer-reviewed research articles, research notes, review papers, and discussion papers, particularly related to: improving methods used to measure texture by instruments and sensory techniques, correlations between sensory and instrumental methods of texture evaluation, and applications of rheological principles for optimizing instrumental tests and information leading to a better understanding and control of textural parameters. Book reviews particularly pertinent to the field are also considered.

Manuscript Submission

 The Journal of Texture Studies prefers to receive all manuscript submissions electronically using Manuscript Central. To submit a manuscript, please follow the instructions below.

 

Getting Started

  1. Launch your web browser (Internet Explorer 5 or higher, Netscape 7 or higher, Firefox 1.0.4 or Safari 1.2.4) and go to the Journal of Texture Studies'  Manuscript Central homepage (http://mc.manuscriptcentral.com/jts).
  2. Log-in or click the "Create Account" option if you are a first-time user of Manuscript Central.
  3. If you are creating a new account.

/FONT>        After clicking on "Create Account", enter your name and e-mail information and click "Next". Your e-mail information is very important.

/FONT>        Enter your institution and address information as appropriate, and then click "Next."

/FONT>        Enter a user ID and password of your choice (we recommend using your e-mail address as your user ID), and then select your area of expertise. Click "Finish".

  1. If you have an account but have forgotten your log in details, go to "Password Help" on the Journal of Texture Studies' Manuscript Central homepage and enter your email address. The system will send you an automatic user ID and password reminder.
  2. Log-in and select "Author Center."

 

Submitting Your Manuscript

  1. After you have logged in, click the "Submit a Manuscript" link in the menu bar.
  2. Enter data and answer questions as appropriate.
  3. Click the "Next" button on each screen to save your work and advance to the next screen.
  4. You are required to upload your files.

/FONT>        Click on the "Browse" button and locate the file on your computer.

/FONT>        Select the designation of each file in the drop down next to the Browse button.

/FONT>        When you have selected all files you wish to upload, click the "Upload Files" button.

 

  1. Review your submission (in both PDF and HTML formats) before sending to the Journal. Click the "Submit" button when you are finished reviewing.

 

You may suspend a submission at any phase before clicking the "Submit" button and save it to submit later. After submission, you will receive a confirmation e-mail. You can also access Manuscript Central any time to check the status of your manuscript. The Journal will inform you by e-mail once a decision has been made.

 

Getting Help With Your Submission

Each page of the Manuscript Central website has a 'Get Help Now' icon connecting directly to the online support system at http://mcv3support.custhelp.com  and telephone support is available 24 through the US ScholarOne support office on: +1 434 817 2040. If you do not have Internet access or cannot submit online, please contact the Editorial Office for assistance.  

The main text should follow the arrangement described below:

nbsp;Introduction: Be brief and state the reason for the work in relation to the field, indicating what new contribution is made by the work described.
nbsp;Materials and Methods: Provide enough information to allow other investigators to repeat the work. Avoid repeating the details of procedures that have already been published elsewhere.
nbsp;Results: Present results as concisely as possible. Do not use tables and figures to present of the same data.
nbsp;Discussion: Interpret the results here. The results should not be repeated, though in some cases it might be desirable to combine results and discussion sections.
nbsp;References: In the text, give references by the surname of the authors and the year, using et al. when there are more than two authors. In the References section, list all authors, organizing the references alphabetically by the primary author's surname. See below for examples of the style to be used.

Responsibility for the accuracy of citations rests entirely with the author(s). References to papers in press should indicate the name of the journal, following the abbreviation used in Chemical Abstracts, and should only be used for papers that have been accepted for publication. Refer to submitted papers by such terms as "unpublished observations" or "private communication," though use such resources only when absolutely necessary.

Follow standard nomenclature as used in the scientific literature and avoid laboratory jargon. If ab¬breviations or trade names are used, define the material or compound the first time that it is mentioned.  In formulas, subscripts and superscripts should be set off clearly. As a decimal sign, use the full stop; crosses should be reserved for multiplications. The sign for 'about equal to' is ? 'proportional to' is indicated by ~ or (:).Please make a clear distinction between the letter O and the zero symbol; the letter 'l' and the number one; kappa and k, mu and the letter  u; nu and v; eta and n. Unusual signs should be identified. Regarding units, use the metric system and the cgs or mks systems.  Abbreviations of units are used only when preceded by a numeral; they are written in the same way for the singular and the plural and are never followed by a period. The abbreviations collected in the Style Manual of the American Institute of Physics (335 East 45th Street, New York, NY 10017) are preferred.

Figures, tables, and art: Figures, tables, and art should be intelligible without reference to the text, though each one should be referenced in the text.

Number figures consecutively with Arabic numerals. Include figure legends on separate pages.

Submit tables in Microsoft Word format, and number them consecutively with Arabic numerals. Include a description of experimental work or an explanation of symbols below the table proper. The title of the table should appear as in the following example:

Please submit artwork in digital format. Save line artwork (vector graphics) as Encapsulated PostScript (EPS) files and bitmap files (halftones or photographic images) as Tagged Image Format (TIFF), with a resolution of at least 300 dpi at final size. Do not send native file formats. More detailed information on the submission of electronic artwork can be found at www.blackwellpublishing.com/authors/digill.asp. If these formats and resolutions are not possible for art, hardcopy art may be submitted.
 
Acknowledgments: Where applicable, list acknowledgments on a separate page.

Short notes: Short notes will be published where the information is deemed sufficiently important to warrant rapid publication. The format for short papers may be similar to that for regular papers but more concisely written. Short notes may be of a less general nature and written principally for specialists in the particular area with which the manuscript is dealing. Manuscripts that do not meet the requirements of importance and necessity for rapid publication will, after notification of the author(s), be treated as regular papers. Regular papers may be very short in length.

Exclusive license: Publication in the journal is subject to the condition that the article (as a whole or in part) has not been published or submitted for publication elsewhere. In submitting the manuscript to the publisher, the author certifies that neither the author's contribution nor any text or figures procured and included by the author infringes upon the rights of a third party, and that the author alone is authorized to dispose of the existing right of utilization. The author will refrain from any other duplication and distribution or digital transfer and reproduction (e.g., on the Internet) during the period of the contract. In order for an article to be distributed as widely as possible in the journal, the author must grant Blackwell Publishing Ltd (Blackwell Publishing) an exclusive licence to publish the article, including the abstract in printed and electronic form, in all languages, and to administer subsidiary rights agreements with third parties for the full period of copyright and all renewals, extensions, revisions and revivals. The article is deemed to include all material submitted for publication with the exception of Letters, and includes the text, figures, tables, author contact details and all supplementary material accompanying the article.
